Rose Damascena is a plant native to Iran. Iranians have been making rose water for long time. Rose Damascena and rose water have been of great importance in Iranian culture, literature, rituals, and economy. Since ancient times, the land of Far has been one of the main habitats and important centers for growing rose Damascena and producing rose water have in Iran. Far's rose Damascena and rose water have always been word famous. In this research, using library resources and a descriptive- analytical method, the importance and position of rose Damascena cultivation and rose water trade in Fars province from the beginning of the Islamic period to the end of Qatar era have been investigated. In this regard, the rose cultivation areas and commercial purposes of Fars rose water in historical periods have been described. Based on the research findings, historical and geographical sources contain important information about the role of the people of Fars in cultivatng roses and extracting rose water, and due to the quality of Fars roses , high- quality rose water always extracted and exported all over the world. Jour was also the main center for growing rose and extracting rose water in the province Fars. Growing rose and exporting rose water was particularly popular with tourists during the Safavid and Qatar periods.
